About

Chef Owner Jove T. Hubbard began his career in pastry at the prestigious Peabody Hotel in Memphis, Tennessee as an overnight baker. His passion for pastry led to him working his way up to Executive Pastry Chef at the Peabody Hotel Little Rock in Little Rock, Arkansas. He later served as the Executive Pastry Chef for the Windsor Court Hotel in New Orleans, and established the pastry programs at The James Hotel, Chicagoand the Chicago Athletic Association Hotel where he served as Executive Pastry Chef. Chef Jove apprenticed and studied at the French Pastry School, Chicago and Ecole Nationale Superieure De La Patisserie in Yssingeaux, France where he learned the art of fine French pastry.

Chef Jove Hubbard’s career has been dedicated to learning and perfecting timeless classics and constantly evolving discipline around the modern French patisserie. With Blue Door Patisserie Chef, his new venture in Albuerquerque, NM., Jove seeks to uphold the finest tradition of French pastry excellence while also featuring elements of modern patisserie. Blue Door features meticulously crafted pastries, breads and savory items using local ingredients. From excellent croissants, baguettes, quiche, and brioche to stunning and seasonal petit gateaux, tarts, and confections, their passion for quality and craftsmanship in patisserie shines through in their offerings.

The Request

In preparation for launching Blue Door Patisserie in Albuquerque’s soon-to-be-opened Sawmill Market, Jove needed support with his online strategy and business website development.

What We Did

He had some initial branding items in place and website copy already coming together so we picked up where he left off by discussing online strategy and goals for the launch and then more specifically his strategies and preferences for a website. We collaborated on the website direction, edited/sourced photos for the site, finalized the site copy, and began development with a goal of completing well before his launch date. That way he could have his online foundation and SEO largely in place early and could focus on more of the brick & mortar aspects of the business launch as he got closer to the official opening. We finished up and soft launched the site before 2 months ahead of the shop’s opening and supported with training and minor updates as more of his business details (menu, hours of operation, etc.) came into focus.

Some success tips from chef Hubbard

1. “Don’t ever let anyone tell you one method is the best because that’s not always the case and is a common mistake.”

2. “You should always keep something in your back pocket. Chefs may want a new menu to come out, they will have theirs prepared and you should always carry a spontaneous new menu with you.”

3. “Don’t be afraid to do something that’s already been done. There are so many great recipes that have been handed down. There is no need to over complicate, make something classic and learn to do it very well."
